Kumara combinations by Attica

Not familiar with Kumara (sweet potato)  I came across a dish from the tasting menu by Attica; Kumara-almond-Pyengana (a type a cheddar cheese from Tasmania)

The Foodpairing tree of sweet potato contains indeed ingredients like almond, egg, buckwheat, shallot (indicated in bold), but also have a look at the other ingredients around sweet potato and come up with other existing combinations

As you can see the ingredients selected by chef Ben Shewry cluster all around the sweet potato; egg yolk, cheddar cheese, almond, shallot, buckwheat. So a nice example of Foodpairing.

The Chimay we didn’t analyzed yet, but we are working on loads of Belgian beers which will be added in the coming time.

Dwarf pea combinations

We just got our first harvest of dwarf garden peas. We planted 2 varieties; Charmette and a variety from Nepal with super small peas.

If we look at the Foodpairing (R) tree of fresh pea, we obtain ingredients like apricot, coffee, mint, pork, butter, pumpkin…

So you can turn peas into a pre-dessert (or just before the main course) with a crumble of coffee, puree of dwarf peas with peppermint, coulis of apricot and dwarf peas to finish.

TRAM EXPERIENCE AT BRUSSELICIOUS

As its name suggests, ‘Tram Experience’; aims to offer a gastronomic and touristic experience. In a tramway of the 60′s, which has been totally refurbished, guests enjoy several classic dishes of Belgian gastronomy, all modified for the occasion by tor 6 op chefs such as Lionel rigolet or Sang-Hoon Degeimbre.

There are 34 place settings on board: 7 tables set for 2 and 5 table set for 4. The decor reminds Electrolux’s Scandinavian origins with the white furniture, contemporary and refine design, wood floor and blue neon lights.

Combinations like this asparagus – camomile – crab – beurre noisette icecream can be experienced while moving through the streets of Brussels. (of course a Foodpairing combination)

AVOCADO-TEQUILA-STRAWBERRY-COCONUT FOODPAIRING AT MONASTRELL

About a month ago we participated together with the people from Monastrell in a Foodpairing Cocktail & Foodpairing dinner.
Chef Maria José San Roman presented food combinations together with cocktails by bartender Gegam Kazarian.

One of the spectacular Foodpairing combinations was this dessert with strawberry and coconut linked with a avocado-tequila-lime juice-ginger-basil cocktail.
The tequila in the cocktail is a special one Excellia, Tequila aged in Cognac barrels. We didn’t analyze yet this particular tequila, but from the Foodpairing tree you can see tequila and strawberry do combine.
